Cranachan - A Traditional Scottish Dessert

There is one Scottish dessert you have to try - Cranachan. (Pronounce: kran-e-ken)

It’s the perfect summer treat with a kick and super quick to whip up as well.

This recipe is inspired by the classic version but lighter due to the skyr.

You can use fresh or frozen raspberries.

Also, feel free to play around with the amount of whisky :)

Ingredients

100ml whipping cream

350g skyr

50g oats

3-4 tbsp whisky

4 tbsp clear honey

100g raspberries

Serves 3.


Method

  1. Put the oats in a frying pan and toast them on a medium heat. Stir occasionally until lightly browned and nutty smelling.

  2. In a large bowl, whip the whipping cream.

  3. Fold in the skyr.

  4. Add the whisky and honey. You can add more honey if you prefer it sweeter.

  5. Set three tall glasses or tumblers on a tray.

  6. Put a spoonful of oats on the base of each glass.

  7. Add two spoons of the cream.

  8. Sprinkle oats on top.

  9. Add a handful of raspberries.

  10. Repeat the layers starting with the whipping cream.

  11. Store in the fridge, ideally overnight to enhance the flavours.
