Fiery Ginger Cookies

These soft ginger cookies are the ideal quick fix when you’re craving something sweet and spicy.

Or as in my case when you have some leftover crystallised ginger.

You can also decorate them with some melted chocolate if you fancy.

Ingredients

130g flour

1 tsp ground ginger

1 1/2 tsp baking powder

50g butter (softened)

100g light brown sugar

1 egg

50g crystallised ginger

Salt


Method

  1. Preheat the oven to 160°C (fan) and line a baking tray with baking parchment.

  2. Finely chop the crystallised ginger.

  3. In a bowl - whisk together the butter and sugar until light and airy.

  4. Add the egg and mix until combined.

  5. Add the flour, ground ginger, baking powder and a pinch of salt and mix until you get a soft dough.

  6. Fold in the chopped ginger.

  7. Use a tablespoon to scoop the dough onto the baking tray. Leave enough space in between as the cookies will expand.

  8. Bake for about 20 min or until golden brown on the side. The centres will still be soft.

  9. Allow the cookies to cool on a wire rack.
