Oatmeal Cookies
I think, I have a cookie monster somewhere inside me …
Like, is there anything better than a soft and chewy cookie?
This is my ultimate base oatmeal cookie recipe. It lets room for plenty of optional add-ins to give your cookies a little twist.
I often use leftover nuts or dried fruits. You can also play around with different spices and of course, add any type of chocolate you’d fancy.

Ingredients
For the dough
188g flour
1 tsp ground cinnamon
1 tsp baking soda
1 tsp salt
230g butter (softened)
200g dark brown sugar
100g granulated sugar
2 eggs
1 tbsp black treacle
2 tsp vanilla extract
240g whole oats
Optional ingredients
Chocolate chips
Nuts - hazelnuts
Dried fruit - cranberries
For the topping
Dark chocolate
Method
Whisk the flour, cinnamon, baking soda, and salt together in a bowl.
In a separate bowl - whisk the butter for about 1 min until smooth.
Add the brown sugar and granulated sugar and beat until creamed.
Add the eggs, treacle, and vanilla and beat until combined.
Now add the dry ingredients and mix until well combined. Fold in the oats and any optional ingredients.
Cover with clingfilm and chill for about 45 min.
Preheat the oven to 170°C (fan) and line a baking tray with baking parchment.
Use an ice cream scoop (or about 3 tablespoons) to scoop the dough on the baking tray. Leave enough space for them to expand.
Bake for 13-14 min or until lightly browned on the sides. The centres will still look soft.
Allow the cookies to cool for 5 min before transferring to a wire rack to cool completely.
Once cooled, melt the chocolate and drizzle on top of the cookies.
